Yogurt Infused Chocolate Chip Muffins

If you’re looking to add a delicious, nutty, and sweet treat to your breakfast table you don’t have to be a regular Gordon Ramsay. If you’ve got access to some plain Stoltzfus Yogurt, a grocery store, an oven, and about 40 minutes then you’ve got pretty much all you need to make mornings a bit better for 12 servings of Chocolate chip (and raisin if that floats your boat) muffins!

OK, so now you’re on board right? Good. Here’s the list of supplies for your journey to flavor-town:

1 cup – Stoltzfus All Natural Plain Yogurt

1 teaspoon – Baking Soda

½ cup – Butter

2 – Eggs

1 teaspoon – Vanilla

2 cups – Flour

½ teaspoon – Baking Powder

½ teaspoon – Salt

1 cup – Sugar

¾ cup – Chocolate Chips

(Optional – ¾ cup of Raisins)

Once your inventory is in order, follow these steps, wait about 15 minutes and enjoy yourself a muffin.

Step 1: Preheat oven to 350 degrees Fahrenheit, grease your muffin pan, and proceed to the next step.

Step 2: In a large bowl, mix the baking soda and yogurt that you have gathered.

Step 3: In a separate bowl, mash the butter you have collected. Add your two eggs to the bow one at a time.

Plop! Plop!

Step 4: Add vanilla to this mixture and set the bowl aside.

Step 5: In another large bowl mix flour, baking powder, salt, and sugar.

Step 6: Take the egg and butter mixture you had prepared and mix it in with the mixture you made in step 5.

Step 7: Add the yogurt mixture, stirring lightly.

Step 8: Mix in the chocolate chips (and/or raisins)

  • Evenly distribute your creation on the muffin pan.
  • Bake 25-30 minutes.
  • Keep an eye on your muffins.
  • Take ‘em out, let ‘em cool off, and eat some delicious muffins.
